1 kg Fresh Peaches sliced
1 tsp Vanilla
1 1/2 tsp Cornstarch
1/8tsp Himalayan Salt
Sprinkle with Whole Brown Sugar
8 tbsp Softened butter
1/3 c Whole Brown Sugar
1 c Gluten Free Rolled Oats
1/3c +2 tbsp Gluten Free All Purpose flour
1 tsp Cinnamon
1/4 tsp Nutmeg
1/8 tsp Himalayan Salt
Heat oven to 425 F or 400 in Convection
Place all dry ingredients into a large bowl and blend together till there are no large clumps
For the Filling
Place peaches, cornstarch, vanilla and salt and stir in an 8X8 baking dish until evenly coated.
Sprinkle topping over peach mixture.
Bake for 20-25mins, and let cool to desired temperature and serve. We love it warm with a little icecream or cream on the top.
